How do you get your family to eat their veggies?  By making this spinach pasta with chicken recipe!

I tried to convince my family that this pasta was made with traditional pesto, but was unsuccessful.  They know me too well, as I have been known to sneak healthy ingredients into dinners before (and with varying degrees of success.)  This time, the color gave it away.  The spinach "pesto" sauce is a very bright and vibrant green, much more so than regular pesto made with basil. 

This recipe didn't get a full endorsement from the entire Pin Junkie crew, but I still think it has potential.  I thought the sauce was actually really good by itself,  but somehow it seemed bland once it went on the pasta.  I'm thinking next time I'll try adding some olive oil to the recipe as well as some toasted pine nuts.  It might be really good with sun dried tomatoes too.

  3. This looks super yummy! I love pesto and think sun dried tomatoes would be great. Perhaps some basil mixed in with the spinach would have given it that taste we all know and love.

  5. This looks great, I love sneaking healthy stuff in to my daughters food, and she'll pretty much eat anything that has pasta with it! I would definitely add some olive oil or maybe some basil infused olive oil. Thanks for sharing

  6. Wow, that's a life saver! Got gluten free pasta (it's not very good, but it is the only pasta I can eat) and lots of spinach, so I'll definitely try it!
