Pumpkin Spice Cake
Over the weekend, we had family visiting and a big dinner planned. I was in charge of making dessert. Pin Junkie Jr. wanted homemade apple pie and Mr. Pin Junkie suggested pumpkin spice cake. I decided to go with pumpkin spice cake because I'd never made it before. A quick search on Pinterest gave me a couple different recipes to choose from. I chose this one and it was fabulous! This pumpkin spice cake recipe makes a rich, moist cake complete with a cream cheese frosting and it's full of fragrant spices that smell really good while it bakes.
I had a lot of fun making this cake too. I could have easily made a sheet cake, but decided to go all out and make a layered cake. It was my very first three layer cake! I wasn't very happy with the way the frosting looked, but the chopped walnuts on the side hid a lot of imperfections. And really, who cares how it looks when it tastes this good! I used to think that chocolate cake was my favorite, but after tasting this cake, I'm not so sure!

Dear Bonnie, I totally agree!! A few imperfections, "who cares!!" when it tastes great. The imperfections give it character.
