Roasted Broccoli With Parmesan

My husband travels frequently for his job and eats out a lot too.  After a recent trip, he mentioned that he'd tried roasted broccoli with Parmesan at a restaurant and it was "a life changing experience."  These are strong words coming from a man who doesn't like vegetables!  I remembered seeing a similar recipe on Pinterest and when I looked there were many versions of this recipe to choose from. I used a combination of this recipe and this recipe

Roasting the broccoli really adds an extra richness and depth of flavor.  I love Parmesan cheese and think it tastes good on just about everything!  I agreed with my husband and thought this roasted broccoli was really good, but I don't know if I would go so far as to describe it as a life changing experience!

Ingredients:
2 heads broccoli (about 4 cups)
2 garlic cloves, minced
3 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
1/2 cup Parmesan cheese

Directions:
Preheat oven to 425 degrees.
Place broccoli on large baking sheet.
Mix minced garlic, olive oil, and vinegar together in a small bowl.  Drizzle olive oil mixture over the broccoli.
Cook for 15 - 20 minutes.
Remove form oven and sprinkle with cheese.

After making this recipe, I realized there are some things I would probably do differently next time.  Both recipes instructed to drizzle the oil over the broccoli while it's on the baking sheet.  The olive didn't really coat the broccoli this way.  Instead, I would mix the oil and broccoli in a bowl, toss it gently to coat everything evenly, then place the broccoli on a baking sheet.  The vinegar didn't really absorb into the broccoli either.  It just pooled onto the baking sheet and burned.  Next time, I would line the baking sheet with aluminum foil to make cleanup easier, or just leave the vinegar out altogether.

  1. I made this without the vinegar and I love it too! Try it with cauliflower! I hated cauliflower until I roasted it.
    Or roast eggplant and that is like eating candy!

    1. Thanks for the good ideas! Usually, I steam my veggies, especially broccoli. Roasting really brings out some great flavors, though.

  15. so this looks good, and I would definitely use your tips. this was with uncooked, fresh broccoli right? I roast asparagus this way, in the toaster oven, with olive oil and parm cheese, and the first time we did that, it was a minor life change, lol.

  16. Yes, I used fresh uncooked broccoli and just roasted it. I've always steamed my broccoli so this was something new for me. I've received many suggestions of other vegetables to roast that also sound yummy. Roasted asparagus with Parmesan sounds really good too!
