Carrot Zucchini Bars with Cream Cheese Frosting
I found this recipe for Carrot and Zucchini bars with Lemon Cream Cheese Frosting on Pinterest from Real Mom Kitchen. These bars are so easy to mix up and bake. The recipe makes a whole pan (36 bars) so it's great to take to a pot-luck or serve a large group.
I've been enjoying them for breakfast with coffee. I know, I'm bad. In previous posts, I've admitted to eating cookies for breakfast, and now I'm admitting to eating cake for breakfast! I'm reminded of Bill Cosby's classic sketch about chocolate cake for breakfast. He talks about how his wife wants him to get up at 6:00 a.m. in the morning to make breakfast for their children. He serves them chocolate cake instead and he argues that the cake is a nutritious breakfast because it has healthy, wholesome ingredients like eggs, milk, and flour. Of course his wife isn't buying any of that and sends him back upstairs which is where he wanted to be in the first place! Well this cake is really healthy because it's got carrots and zucchini! (just don't think about all the sugar that's in it!)
