Gluten Free Banana Pancakes
I found the recipe for these banana pancakes here and here. It's a simple recipe. Just mash a banana and add an egg along with some salt and cinnamon to taste. Then cook in a lightly oiled skillet just like you would for pancakes. The first recipe calls for one egg. The second recipe says to use two eggs. I tried both ways. The first day I made these with two eggs. They were a little eggy, more like french toast, rather than light, fluffy pancakes. They were still good especially with a little bit of powdered sugar and some fruit. One banana and two eggs made seven pancakes and I ate five of them, so they obviously weren't awful.
The second day, I mixed up another batch and I used only one egg. It was much more difficult to flip the pancakes because the batter wouldn't hold together an the pancakes had a much sweeter, banana taste. Both ways were delicious!

ReplyDeleteI tried this and could NOT get them to form! It was a sloppy fail :-( BUT, I did make homemade "ice cream" by putting two bananas (more on the brown side)and some peanut butter in the food processor. Got them all blended up and froze it! It was DELISH!
